Umbria pinot grigio IGT
Soil: gravelly ground, calcareous (gravel, limestone, pH 6.80). It is 320 meters on the sea level, sud-west exposure.
Density of the plantations: 4.000 plants per hectar. Average yield: 72 quintals per hectar
Vintage: harvest slightly in late of 7 days, manual harvesting, and then the grape is immediately pressed. The spontaneous fermentation begins at temperature of 18°C with the presence of indigenous yeasts.
Maturation: on noble lees for a period of 6 months, and then bottled.
Well bodied wine, with a good acidity and freshness (very good even the late harvest) thanking to the moist soil, that it gives freshness to all our wines. It is normal that this characteristic of the soil brings the polyphenols to our white and red wines, giving at the beginning of the maturation of every wine, a natural and pleasant sharp, as a typical characteristic.
The alcoholic part is supported by the acid part, hiding in part its strength. In this wine there are many hints of: apple, some white flowers, aromatic herbs, and salty hints.
This an excellent wine for fish dishes even if it is alcoholic, it is very good with aromatic tasty fat meals.
