Umbria rosso IGT – Rigovernato
Grape: Sangiovese 30% , Merlot 70%
Re-fermentation: the large part of the Sangiovese, from a vineyard of over 20 years, it ages for almost 40 days. The must from raisined grapes, pressed by hand press, put in addition to the wine Merlot (of a new vintage). This the ancient technique of the “rigoverno”.
This wine is in this way enriched by the fermented must, rested in the spring in big Slavonian oak barrels.
It can rest from 36 months to 48 months, until the fermentations naturally stop because of the high degree of alcohol content. It lays in bottles for other 6 months before the selling. This wine has a complex structure, with fine aromas of ripe red fruit in syrup and leather, slightly herbaceous and tannic.
This a wine for structured dishes, game meat, and succulent meat. Selected native yeasts and low levels of sulphites.
