Grapes: Sangiovese 85% , Canaiolo N. and Cabernet in flexible % percentage it depends on the vintage.
Traditional Guyot system and turned over-turned
After maceration of almost 28 days, it lays on noble lees in cement at least for a period of 12 months. It ages than in Slavonian oak barrels (of different measure from 5 to 15 hl) for 2 years and then other 6 months in bottle.
For its characteristic, this wine ages in bottle for long periods. Intense aroma, full-bodied, powerful wine with a pleasant varietal flavour by the long time maturation and sophisticated balanced intensity.
Its aromatic intensity is harmonized by the time with a wide hint of red fruits, jam and balsamic notes with with the evidence of tannins but not aggressive.
Typical wine for grilled meat, or for succulent roasted meat, for first courses and for legume soups, for tasty cheese and salami like the food in Umbria.
